Shad Season





My first job as a kid was cleaning fish. I cleaned millions, and I removed the roe from thousands of shad every late winter/early spring. In spite of that I still love to eat shad -- both the fish and the roe. The breakfast invitation is uncommon and this one, by DPW, was not passed up -- there are only a few weeks each year to eat like this....

I just had shad roe for the first time, wrapped in bacon served over smoky gouda cheese grits. Quite fantastic.
